Chicken lollipop recipe

Chicken lollipop is a popular and delicious appetizer that is commonly served in Indian and Chinese cuisines. It's made from chicken wings, and the meat is cut in a way that it resembles a lollipop. 



Here's a basic recipe for making chicken lollipops at home:

Ingredients:

» Chicken wings (about 12 pieces)

» 1 tablespoon ginger-garlic paste

» 1 tablespoon soy sauce

» 1 tablespoon red chili sauce or sriracha sauce

» 1 tablespoon tomato ketchup

» 1 teaspoon black pepper powder

» 1 teaspoon garam masala (Indian spice blend)

» 1/2 teaspoon turmeric powder

» 1 tablespoon lemon juice

» 2 tablespoons all-purpose flour 

» 2 tablespoons cornstarch

» Salt to taste

» Oil for deep frying

» Chopped spring onions and cilantro for garnish (optional)

» Lemon wedges for serving

Instructions:

1. Prep the chicken wings: Clean and wash the chicken wings thoroughly. Pat them dry with paper towels. To make the lollipop shape, hold the chicken wing at the thicker end and carefully push the meat towards the top, creating a lollipop-like appearance. Discard the thinner bone part or save it for making broth or stock.


2. Marinate the chicken: In a large bowl, combine ginger-garlic paste, soy sauce, red chili sauce, tomato ketchup, black pepper powder, garam masala, turmeric powder, lemon juice, and salt. Mix well to form a smooth marinade. Add the chicken lollipops to the marinade, coating them evenly. Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours, or preferably overnight, to let the flavors infuse.


3. Prepare the batter: In a separate bowl, mix all-purpose flour (maida) and cornstarch. Add a pinch of salt and some water to form a smooth and thick batter. The batter should be thick enough to coat the chicken lollipops.


4. Fry the chicken lollipops: Heat oil in a deep frying pan or wok over medium-high heat. Dip each marinated chicken lollipop into the batter, making sure it is coated evenly. Carefully drop the coated chicken lollipop into the hot oil and fry until they turn golden brown and crispy. Fry in batches to avoid overcrowding the pan. Once done, remove them using a slotted spoon and drain excess oil on paper towels.


5. Garnish and serve: Arrange the fried chicken lollipops on a serving plate. Optionally, garnish with chopped spring onions and cilantro for a fresh and colorful touch. Serve the chicken lollipops hot with lemon wedges on the side.
