Chicken Stir-Fry

Chicken stir-fry is a popular and delicious dish that involves cooking sliced or diced chicken with various vegetables in a flavorful sauce. It's a versatile and quick meal that can be customized to suit individual tastes and preferences. 


Here's a basic recipe for chicken stir-fry:

Ingredients:

» 1 lb (450g) boneless, skinless chicken breasts or thighs, thinly sliced or diced

» 2 tablespoons vegetable oil or peanut oil

» 1 onion, sliced

» 2 garlic cloves, minced

» 1-inch piece of fresh ginger, grated or finely chopped

» Assorted vegetables (e.g., bell peppers, broccoli, carrots, snap peas, mushrooms), sliced or chopped

» 1/4 cup soy sauce

» 2 tablespoons oyster sauce (optional)

» 1 tablespoon hoisin sauce (optional)

» 1 tablespoon cornstarch (corn flour) mixed with 1/4 cup water (for thickening the sauce)

» Cooked rice or noodles, for serving

Instructions:

1. Prepare all your ingredients: Slice or dice the chicken, chop the vegetables, mince garlic, and grate the ginger.

2. Heat a wok or large skillet over medium-high heat. Add 1 tablespoon of oil, swirl it around, and then add the sliced or diced chicken. Stir-fry the chicken until it's cooked through and slightly browned. Remove the chicken from the wok and set it aside.

3. In the same wok, add another tablespoon of oil if needed. Add the sliced onions, minced garlic, and grated ginger. Stir-fry for a minute or until the onions become translucent and fragrant.

4. Add the chopped vegetables to the wok and continue to stir-fry for a few minutes until they are tender-crisp. You can add the vegetables in the order of their cooking time, adding tougher ones like carrots first and quicker-cooking ones like snap peas last.

5. Return the cooked chicken to the wok with the vegetables.

6. In a small bowl, mix the soy sauce, oyster sauce, and hoisin sauce (if using) together. Pour this sauce over the chicken and vegetables in the wok, stirring to coat everything evenly.

7. Push the chicken and vegetables to one side of the wok to create a space for the sauce. Pour the cornstarch-water mixture into the empty space and stir quickly to thicken the sauce.

8. Once the sauce has thickened, mix it in with the chicken and vegetables.

9. Taste the stir-fry and adjust the seasoning or sauce as needed.

10. Serve the chicken stir-fry hot over cooked rice or noodles.

Feel free to add your favorite seasonings or additional ingredients like chili flakes for some heat, cashew nuts for crunch, or sesame oil for extra flavor. Enjoy your delicious chicken stir-fry!
