Ingredients:

»3/4 cup packed brown sugar

    »1/2 teaspoon salt
    »3 cups whole milk
    »3 large egg yolks
    »2 tablespoons unsalted butter
    »1 teaspoon vanilla extract

Instructions:

1- In a medium saucepan, whisk together the brown sugar, cornstarch, and salt until well combined.

2- In a separate bowl, whisk the egg yolks until smooth.

3-Gradually pour the milk into the saucepan with the dry ingredients, whisking constantly to ensure there are no lumps.

4-Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and comes to a gentle boil. This should take about 5-7 minutes.

5-Once the mixture has thickened, remove the saucepan from heat.

6-Gradually pour a small amount of the hot mixture into the bowl with the whisked egg yolks, stirring constantly. This helps to temper the eggs and prevent them from scrambling.
Pour the egg yolk mixture back into the saucepan with the rest of the pudding, stirring constantly.

7-Place the saucepan back on the stove over low heat and cook for an additional 2 minutes, stirring continuously.

8-Remove the saucepan from heat and stir in the butter and vanilla extract until fully incorporated.

9-Let the pudding cool for a few minutes, then transfer it to individual serving dishes or a large bowl.

10-Cover the pudding with plastic wrap, making sure the wrap is touching the surface of the pudding to prevent a skin from forming.

Chill the butterscotch pudding in the refrigerator for at least 2 hours or until it's fully set.
Serve the pudding with a dollop of whipped cream on top, if desired, and enjoy!
