The Symphony of Flavors: Mutton Curry Recipe

I'd be happy to share a mutton curry recipe with you! Mutton curry is a delicious and flavorful dish that's popular in many cuisines around the world.  I always thought making mutton curry is a long and laborious process that needs hours of prep and cooking time. But you shouldn't have to wait so much for good things in life!

Here's a basic recipe for you to try:


Ingredients:

- 500 grams mutton, cut into pieces

- 2 large onions, finely sliced

- 2 tomatoes, chopped

- 2 teaspoons ginger paste

- 2 teaspoons garlic paste

- 2-3 green chilies, slit

- 1/2 cup plain yogurt

- 2 teaspoons red chili powder (adjust to taste)

- 1 teaspoon turmeric powder

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- 4-5 tablespoons cooking oil

- Salt to taste

- Fresh coriander leaves, chopped (for garnishing)

Spice Blend:

- 4-5 green cardamom pods

- 4-5 cloves

- 1-inch cinnamon stick

- 1 teaspoon cumin seeds


Instructions:


1.Marinating the Mutton:

In a bowl, mix the yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, and salt to form a marinade.

Add the mutton pieces to the marinade, ensuring they are coated well.

Cover the bowl and let the mutton marinate for at least 1-2 hours, preferably overnight in the refrigerator.


2.Preparing the Spice Blend:

In a dry pan, lightly toast the green cardamom pods, cloves, cinnamon stick, and cumin seeds until fragrant.

Allow the spices to cool and then grind them into a fine powder using a mortar and pestle or a spice grinder.


3.Cooking the Mutton Curry:

Heat the cooking oil in a large, heavy-bottomed pot or pressure cooker over medium heat.

Add the sliced onions and sauté until they turn golden brown.

Add the marinated mutton and cook until the meat is browned on all sides. This helps to develop the flavor.

Add the chopped tomatoes and cook until they turn soft and the oil starts to separate from the mixture.

Add the prepared spice blend and mix well.


4.Simmering the Curry:

Add enough water to cover the mutton pieces, and bring the mixture to a boil.

If using a pressure cooker, cover it with the lid and cook on medium heat for about 15-20 minutes, or until the mutton is tender. If using a regular pot, cover it partially and let the curry simmer for about 1-2 hours, or until the mutton is tender and the flavors are well developed.

If the curry becomes too thick while cooking, you can add a little water to achieve your desired consistency.


5.Finishing Touches:

Once the mutton is cooked and tender, add the slit green chilies and garam masala. Stir well.

Let the curry simmer for a few more minutes to allow the flavors to meld.


6.Garnish and Serve:

Garnish the mutton curry with freshly chopped coriander leaves.

Serve the delicious mutton curry hot with steamed rice, naan, or roti.

Is goat meat and mutton the same thing?
