Grilled Chicken and Pesto Sandwich

Here's a simple recipe for a delicious grilled sandwich:


Ingredients:

- 2 boneless, skinless chicken breasts

- Salt and pepper to taste

- 4 slices of bread (your choice of type)

- 4 tablespoons pesto sauce

- 1 large tomato, sliced

- 8 slices of mozzarella cheese

- 2 tablespoons butter, softened


Instructions:


1. Cook the Chicken:

Preheat a grill or grill pan over medium-high heat.

Season the chicken breasts with salt and pepper.

Grill the chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 74°C).

Once cooked, remove from the grill and let it rest for a few minutes before slicing it into thin strips.


2. Assemble the Sandwiches:

Lay out the 4 slices of bread and spread pesto sauce on one side of each slice.

On two of the slices, layer the sliced chicken, tomato slices, and mozzarella cheese.

Top with the remaining two slices of bread, pesto side facing inwards.


3. Grill the Sandwiches:

Heat a large skillet or pan over medium heat.

Spread a thin layer of butter on the outside of each sandwich.

Place the sandwiches in the skillet and cook for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.


4. Serve:

Once the sandwiches are grilled to your desired level of crispiness, remove them from the skillet.

Allow them to cool for a minute, then slice in half and serve hot.
