Garlic Mashed Potatoes Recipe

This is sure to be your new favorite way to cook mash. Infused with easy homemade garlic butter, this creamy, moreish side goes so well with your favorite pie, steak or a slow-cooked casserole.

These garlic mashed potatoes are rich and very tasty! For a creamier texture, use cream in place of the milk. These are also terrific topped with chopped spring onions.

Preparation Time: 10 minutes. | Cooking Time: 20 minutes. | Total Time: 30 minutes. |Serves: 4

Ingredients:

൭ 8 potatoes, peeled and quartered

൭ 125ml milk

൭ 50g butter

൭ 2 cloves garlic, minced

൭ salt to taste

൭ 1 pinch ground white pepper

൭ 2 tablespoons sesame seeds


Method:

Step 1:

Peel and halve (or quarter) the potatoes. Place in a large saucepan of cold water. Cover and bring to the boil. Uncover and simmer for 20 minutes until tender. Drain well, then return to the hot pan to steam dry.

Step 2:

Meanwhile, melt the butter and oil together and infuse over a very low heat with the garlic. When the potatoes have steamed dry, remove the garlic with a slotted spoon.

Step 3:

Using a masher or ricer, mash the potatoes until smooth. Stir in almost all of the garlic butter, saving a little to serve. Season with a pinch of sea salt and black pepper and stir in the milk. Put in a warmed bowl to serve. Drizzle with the remaining garlic butter and season to taste.


To Serve 8:

Use the same amount of garlic (infuse for a little longer in the butter for more flavor), but double the remaining quantities. Add a further 2 tbsp milk to help mash the potato.


Tips:


Pick a waxy potato instead of super-starchy one.

Potatoes are typically characterized as either waxy or starchy. When you’re looking for baked potato-vibes, starchy potatoes like Russets are the way to go. However, for super-buttery, fluffy mashed potatoes, you need to go thin-skinned and waxy, like Red Bliss. Unlike starchy potatoes, which can get waterlogged when boiled or gluey when whipped, waxy potatoes stay light and creamy and don’t absorb too much water.


Roast your garlic:

Spoiler alert: roasted garlic is the most satisfying food. Toss a whole head (skins and all!) with a bit of oil and wrap it up in foil. Bake the package for 45 minutes, and prepare yourself—the garlic cloves loose their spiciness, taking on a sweet flavor and sticky, spreadable texture. We definitely recommend roasting two heads at once here—you can smash the garlic cloves from one head into your mashed potatoes and save the second one to make roasted garlic bread.
